Pauline and Pierre-Olivier Laurent run Cantalauze, a nine-hectare winegrowing estate in Cahuzac-sur-Vère in the Tarn region, in the heart of the South-West. Founded by Brigitte and Guy Laurent,Pierre-Olivier's parents, the estate was quite rare in the 80s, with organic viticulture right from the start in 1982, and Vin de France cuvées, a rejection of oenological techniques that were common at the time. Today, Pauline and Pierre-Olivier are the worthy heirs of the Cantalauze spirit: after meeting during their agricultural engineering studies and several experiences abroad, they chose to set up on the family estate in 2014. For the past 10 years, they have continued to develop life in the vineyard in order to give birth to lively wines. Cantalauze means “Singing Lark” in Occitan: an auspicious bird, laden with symbolism, representing the union of the earthly and the celestial... what a great program for a wine tasting. Sincere juices, reflecting the diversity of Gaillac terroir.
Minimal sulphites
Nose carried by notes of black fruits, particularly blackcurrant, before evolving towards pepper and a subtle vegetal touch. Fleshy and powerful on the palate, "libre expression" meaning "freedom of expression/speech", this wine is definitely free and unshackled by convention.
