An eau de vie made from the distillation of the estate's ciders, produced from organic apples grown in the orchards of Clohars-Carnoët, in South Finistère, Brittany. Distillation takes place in a Gazagne column still dating from the 1950s, heated over a wood fire, now full-time at the Cidrerie de l'Apothicaire, but which used to criss-cross the countryside. After a short period in vats, bottling on the estate without filtration.

Nolwenn Merrien and Matthieu Huet run the Cidrerie de l'Apothicaire, located in Clohars-Carnoët in Southern Finistère, Brittany. These “local kids” had their first careers in healthcare, before founding their estate and setting up in earnest as cider makers in 2018.
