Signora Grappa is a marc brandy crafted from the distilled grape pomace of Nadia Verrua’s Cascina Tavijn estate, located in Piedmont, Italy. The grapes are certified organic, and Nadia follows a minimal-intervention approach across the estate. After fermentation continues in tanks, the pomace is distilled at Cascina La Noce, a distillery in Biella, north of Turin. The process uses a traditional copper pot still, heated with wood. Only the finest part of the distillation, the heart, is retained, with the head and tail discarded. Pure water is gradually added to lower the alcohol content. Bottled by Cascina La Noce for Nadia Verrua, this is an ultra-limited production of barely a hundred bottles.

Nadia Verrua
Nadia Verrua is a Piedmont-born vigneronne based in the region of Asti. Her estate is comprised of 6 ha of vines and 4 ha of hazelnut trees. Since 2001 she has been producing delicate and refined reds from grapes which originated in this part of the Alps.
