A blend of sweet, bitter, and tart cider apple varieties, mostly sourced from the estate’s organic orchards in Clohars-Carnoët, South Finistère. Pressed, naturally fermented with native yeasts, bottle-conditioned, with a short time in tanks. Brief maceration with elderflower before bottling to extract its full floral aromatics without any vegetal notes. Bottled unfiltered, unfined, unpasteurized, and with no added sulfites.

Nolwenn Merrien and Matthieu Huet run the Cidrerie de l'Apothicaire, located in Clohars-Carnoët in Southern Finistère, Brittany. These “local kids” had their first careers in healthcare, before founding their estate and setting up in earnest as cider makers in 2018.
