Single-varietal cider, made from 100% Marie Ménard apples—a rustic, bittersweet variety—sourced from the cidery's own orchards, grown organically in the small town of Clohars-Carnoët in South Finistère, Brittany. A majority of tart varieties in this cuvée, blending of the juices right after pressing, fermentation with indigenous yeasts, natural foaming, short time in vats. Bottled without fining or filtration, without pasteurization or any added sulfites.
