A blend of co-planted old vines grown organically : 65% Gamay, Mondeuse and various forgotten grape varieties (Peloursin, Gueusche...) The vines are planted on clay-limestone soils from the Bajocian age. Harvested by hand using small crates. Vinification: maceration of whole bunches with indigenous yeasts for 15 days, end of fermentation and maturation in 600-liter barrels for 12 months than 5 months in vats. Bottled on the 16th of April 2024, without filtration or fining, and zero added sulphur!
