100% Aligoté Doré from biodynamically-grown vines planted on several small plots at an altitude of over 400 meters, with a wide variety of soils, marl and clay over limestone slab. Harvested by hand at full ripeness, the grapes are slowly and gently pressed in a vertical press to obtain a clear, high-quality juice, without settling. Vinified in 600-liter barrels, aged 12 months on lees with 1/3 new oak, then a few months in vats on lees before bottling. Not fined or filtered, very low sulphur.

Boris Champy, a child of the 1974 vintage, is at the helm of his eponymous estate in Nantoux, in the Hautes-Côtes-de-Beaune region.
