A dense, direct juice of great purity, with notes of flowers and white fruit. The palate has great tension and richness, with a long finish.
100% Chardonnay from Alice and Olivier's négociant business. The grapes come from organic winemakers who share the same values than the couple. The grapes are harvested by hand when very ripe, followed by a natural vinification: long fermentation in barrels on fine lees, without stirring, then maturation for one year in 10-to-12-year-old barrels. Bottled at the estate without fining nor filtration, just a pinch of sulphur.
