Bourgogne Chitry - 2023 - Alice et Olivier De Moor

100% Chardonnay, from 20-year-old vines planted on two parcels with complementary geology: one grown on brown clay and the other on white clay, and with a bedrock of limestone and solid marl. The estate is certified organic and biodynamic. Hand-picked, late harvested grapes, long fermentation in barrels on fine lees without bâtonnage. Matured for one year in barrels that have seen around 7 wines. Unfiltered, unfined, just a microdose of sulphur at bottling. With the De Moors, the intentions are good, and the result is extraordinary.
