100% Chardonnay from biodynamically-grown vines planted on a 3-hectare plot on the Montagne de Cras, which shows a variety of stony and clay soils with pebbles - indeed, "Cras", Crag in Celtic, means pebbles! Hand-harvested at full ripeness, natural vinification: fermentation in 228-liter barrels, 12 months of aging on the lees in barrels with 25% new oak, then a few months in vats on lees before bottling. Not fined or filtered, with sulfites only used very sparingly.

Boris Champy, a child of the 1974 vintage, is at the helm of his eponymous estate in Nantoux, in the Hautes-Côtes-de-Beaune region. The winemaker's background is nothing short of admirable: originally from the Champagne region, he worked in Napa Valley for 10 years before becoming technical director of Louis Latour and then manager of Clos des Lambrays for many years.
