A cuvée of Pinot Noir from grapes selected specifically for their finesse, from vines cultivated biodynamically and planted in the village of Comblanchien, on soils of clay and limestone. The parcel of 1.6 ha has the shape of a hat (chapeau in French) which gives the cuvée its name. The grapes were harvested by hand. Vinification: indigenous yeasts, gentle extractions, manual punching of the cap, and limited pumping over. Gentle pressing, 14 months of maturation in oak barrels, 10 to 15% of which are new.
