100% Pinot Noir from 60-year-old vines, cultivated in sustainable agriculture and planted in the heart of the red Grands Crus, on a medium slope, facing South-East. Clay-dominant soils. Manual harvest in small crates, two successive sortings on table. Total destemming, punching down and pumping over adapted to the daily tasting, soft pressing, 15 months of aging in barrels with 30% new oak. 3 to 4 months of blending before bottling at the Estate, without fining.
David Croix
David Croix is at the head of the Domaine des Croix, located in the heart of Beaune. Originally from Montlouis-sur-Loire, the young guy knew from the age of 16 that he wanted to make wine, and therefore started a journey to become an oenologist. He went through the viti-oeno diploma in Tours, before leaving for Burgundy where he graduated from the Master of Oenology in Dijon in 2001. He...
