Blend : 2/3 Gamay and 1/3 Pinot Noir, respectively planted in 1960 and 1977, organically grown and planted on very clayey soils, two different parcels in the commune of Premeaux-Prissey. Manual harvesting. Vinification: total destemming, co-maceration of the two grape varieties, pressing during alcoholic fermentation in order to preserve a fruity aroma, malolactic fermentation is done in 228-liter barrels that have seen several wines, racking in the spring and then 4 months in vats, bottled at the Estate.
