Chardonnay from vines over 20 years old, farmed biodynamically and planted on silty-clay soils, maintained by plowing and grass cover, in the commune of La Salle, 15 km North of Mâcon. Hand-harvested. Slow pressing of the whole clusters in a pneumatic press. Fermentation and aging on fine lees in barrels that have seen several wines, this cuvée is a blend of the 2020, 2021, 2022, and 2023 harvests, with aging ranging from 12 to 48 months before blending and a final stay in tanks. No fining, no filtration, and no added sulfites.

Philippe Valette represents the third generation of vignerons to run this 8.5 ha estate (15 ha if we count the vines of his brother Baptiste) located in Chaintré, a village on the border between the Mâconnais and Beaujolais appellations.
