100% Pinot Noir from vines in conversion to organic farming (since they're a young estate!), planted in 1990 in the commune of Vincelottes in the Yonne department, on a South-facing hill that shows limestone soils. Manual harvest and sorting of the grapes. Vinification: 10% of direct pressing and 90% of maceration of the whole bunches for almost a month with one or two punchings of the cap, gentle pressing, one year of aging in old barrels without racking. Bottled on the 9th of September 2024, without fining or filtration, zero added sulphur.
