100% Chardonnay from vines grown in sustainable farming, planted on a total of one hectare at around 350 meters above sea level. Manual harvest in small crates. Vinification: lightly crushed grapes, soft and long pressing, during three hours. Vinification: indigenous yeasts, fermentation and first part of aging without sulphur, aging in 500-liter barrels that have seen two to three wines, for 18 months. Bottled at the Estate after a light filtration.
David Croix
David Croix is at the head of the Domaine des Croix, located in the heart of Beaune. Originally from Montlouis-sur-Loire, the young guy knew from the age of 16 that he wanted to make wine, and therefore started a journey to become an oenologist. He went through the viti-oeno diploma in Tours, before leaving for Burgundy where he graduated from the Master of Oenology in Dijon in 2001. He...
