A 100% Chardonnay cuvée, from old vines grown in the Mâcon region on slopes of limestone marls with very shallow soil. Vinification: after direct pressing, this non-oxidative cuvée (made using ouillage or ‘topping up’ of the barrels) was fermented with indigenous yeasts then matured on its lees in large barrels for more than three years in a humid cellar. No added sulphur, no fining, and no filtration.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
