A blend of Sciaccarello and Minustellu grapes from vines grown biodynamically and certified by Demeter, planted in 1989 on sandy-clay soil that was the site of the old bread oven, hence the name of the cuvée. Hand-harvested, small yields of 18 hl/ha. Vinification: 30 days of maceration in 25-hl casks, pneumatic pressing, 18 months of aging in 800-liter egg-shaped concrete vats. Bottled at the estate without fining or filtration, 6 months of bottle ageing at the estate before releasing the cuvée.

Manu Venturi, child of the 1975 vintage, born in Corsica to an oenologist father, is his worthy successor at Domaine Vico and Clos Venturi, in the heart of Haute-Corse.
