100% Fendant (the local name for Chasselas in Valais) from biodynamically farmed vines planted on various granitic soils between Fully and Martigny. Hand-harvested at peak ripeness. Natural vinification: direct pressing of the whole bunches, static settling, indigenous yeasts, 8 months of aging on the lees in tanks. Bottled at the estate with just a micro-dose of sulfur.
