A blended cuvée of 85% Barbera, 10% Dolcetto and 5% Ancellotto, from 25-year-old vines, cultivated on clay soils in the Montebello vineyard. Yield: 50 hl/ha. Vinification: maceration and fermentation with skins for 2 months, matured in vats and casks for 4 years. Zero sulphites added at bottling, and no filtering. In Stefano’s words: "L'Etoile is a concentration of the vibrations of the world, captured by plants to constitute their being. Thanks to the long maturation process during its creation, it manages to embody in a particularly elegant way this game of contrasts between the world of growth – of the liquid and continuous – and that of construction – of the solid. Its great richness fills our sensory world entirely, while remaining fluid and easy to drink."

Stefano Bellotti was a living legend, Italy’s Pierre Overnoy if you will, settled since 1977 in the hills of Novi Ligure between Alexandrie and Gênes (Piedmont). Stefano was 18 years old when he inherited this family farm which comprised just one hectare of vines. And so, it was from almost nothing that Italy’s father of biodynamic viticulture got his start.
