Despite a long maceration on the skins, what we have here is a very clear juice, closer to a white wine, since the Nosiola grape variety is very low in tannins. A dry wine, rich and direct, with notes of orange blossom and grapefruit. It’s delightfully surprising!

This grape variety, Nosiola, is cultivated on a poor, clay soil and even though it was a traditionnal variety from the area, it has become quite rare because it is difficult to grow in the humid Alpes. Vinification: the grapes are de-stemmed, undergo a long maceration on skins from September to March in closed clay amphorae from Spain, for 8 months. In time, the wine will be separated from the skins by racking, then be matured an additional 2 months in acacia wood barrels. A very light dose of sulphites at bottling.
