A sparkling crémant made of 100% Chardonnay, from vines farmed organically, planted on clay-limestone soils and harvested by hand. After direct pressing, the wine is matured 24 months on its lees, then bottled for the secondary fermentation: the "prise de mousse" in the bottle. Afterwards, the bottles are aged in racks for more than 24 months. A Brut Nature sparkling wine, with zero dosage.

Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
