100% Jura Savagnin, a cuvée made from grapes purchased from vines grown organically and planted on the village of Arbois, on marly soils. Harvested by hand. Vinification: one month of skin-contact maceration of the whole clusters, without touching the harvest, in order to perform an infusion more than forcing the extraction ; gentle pressing, two years of ageing in 500-liter barrels, without new oak. Bottled without fining or filtration, with no added sulfites. Aging in bottles for one year in the estate's cellar.
