A lively, clean, precise wine, with notes of spices and curry. On the palate: full-bodied, rich, intense and complex, with flavours of walnut, cinnamon and gingerbread. A classic example of the style, with notes of citrus fruits to boot – simply splendid!

A 100% Savagnin from vines planted on grey marls, matured sous voile. Vin jaune or yellow wine, is known as the ‘Gold of the Jura’. The grapes were harvested late (2nd fortnight of October). The wine was matured in a Burgundian barrel for 9 years, without any ouillage or topping up. Over time, 1/3 of the total volume evaporates, while a layer of flor forms on the surface of the wine in the barrel, which nourishes and protects the wine as it matures. Once this period is over, “la percée” can be performed, when the wine removed and bottled.

Jean François Ganevat
Jean-François Ganevat represents the 14th generation of vignerons of his family in Rotalier, in the south of Jura. After years working as the cellar master of Jean-Marc Morey in Chassagne-Montrachet, he took over his family’s estate in 1998.
