A natural sparkling wine, with a nose of crushed red berries. On the palate, this is a wine boasting aromas of white fruits, rose and citrus fruit, and elegant bubbles. Place upright in the fridge a few hours before enjoying to allow the natural deposit to settle – and serve chilled!

50% Cinsault, 30% Mourvèdre (both from 30-year-old vines), and 20% Vermentino from 15-year-old vines, all organically farmed and planted on clay-limestone soils. Organic viticulture with hand-harvesting. Winemaking: direct pressing, fermentation starts in stainless steel tanks with indigenous yeasts, ancestral method, bottled at the end of October 2023 with a few grams of residual sugar to create the effervescence. Unfined, unfiltered, and with zero added sulfites!

Kohki Iwata, a Japanese-born vigneron who arrived in France 10 years ago, brings to us wines from his wine negotiant business WA Sud. Following prestigious apprenticeships with such iconic figures in natural wine as Olivier Cousin and Jean Foillard , in 2015 he began working at the Domaine des Soulié in Saint Chinian, where the vineyards have been farmed organically since 1960.
