100% Pinot Noir from the Pays d'Oc, made from 15-year-old vines farmed organically and planted on clay-limestone soils. After hand harvesting, the grapes are 100% destemmed in the cellar and crushed, then fermented two weeks in vats, with very little pumping over and no punching of the cap, to avoid extracting excessive tannins. Maturation for 18 months in 228-litre barrels, they're actually old barrels from Fred Cossard estate in Burgundy! Neither fined nor filtered, bottled on the 25th of January 2024with just a microdose of sulphur.

Kohki Iwata, a Japanese-born vigneron who arrived in France 10 years ago, brings to us wines from his wine negotiant business WA Sud. Following prestigious apprenticeships with such iconic figures in natural wine as Olivier Cousin and Jean Foillard , in 2015 he began working at the Domaine des Soulié in Saint Chinian, where the vineyards have been farmed organically since 1960.
