60% Syrah, 20% Mourvèdre and 20% Grenache, from organically grown vines of 25 years old. Syrah and Grenache are planted on a North-facing limestone plateau. The Mourvèdre is planted in the commune of Aniane, plots facing South and North-West, soils of rolled pebbles. Manual harvest. The three grape varieties are vinified separately. Destemming, crushing, indigenous yeasts, about 30 days of maceration, 24 months of aging in barrels that have seen several wines. Blended two months before bottling, without filtration, during the waning moon.

Frédéric Pourtalié is one of the most admired winemakers in Languedoc, as his achievement at the head of Domaine de Montcalmès has earned him respect.
