Blend dominated by Grenaches (95%), sourced from biodynamically farmed vines at the foot of Mont Ventoux, harvested by hand in small crates. Grapes are purchased from a biodynamic-certified grower. Vinified in the Loire at the Bellivière cellar: fully destemmed, with a 3-week maceration and regular punch-downs by foot. Bottled with added overripe Pineau d’Aunis marc to spark the fermentation. Aged on laths for 9 months, disgorged in June 2023, with a light touch of sulfur.

Clément Nicolas and his wife Laure-Anne took over the reins of Domaine de Bellivière in a smooth transition in 2021, after Clément had joined his parents, Eric and Christine Nicolas, at the estate in 2015.
