40% Folle Blanche and 60% Chardonnay from vines farmed biodynamically, on southeast facing plots. Harvested by hand, with low yields around 20 hl/ha. This cuvée is vinified by Claire Niger, employing all the respectful methods the estate is known for: the two grape varieties are destemmed by hand, followed by 8 months of maceration on the skins in amphorae for the Chardonnay, and 1 month of maceration for the Folle Blanche, followed by one year of maturation in amphorae. Blended before bottling, no fining, filtration, without added sulphur.

Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1998. He’s been collaborating with Guy Bossard since 2014, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine in the Muscadet....
