Chapitre I - 2022 - Valentin Desloges
Les Quatre Piliers
A sunny and hot vintage, but still a precise Sauvignon, without any varietal heaviness, carried by a mineral backbone and notes of candied oranges, exotic fruits, brioche, verbena. Long and saline finish. Ideally 30 min in the fridge and 15 min in a carafe, and you'll have top-quality juice.

100% Sauvignon from 15 to 35-year-old vines, planted on a bit more than three hectares in total, the vines have been in the process of being converted to organic farming since Valentin bought the vineyard, and are planted on limestone soils, with sands and flint. West exposure. Manual harvest, direct pressing, indigenous yeasts, fermentation in demi-muids, aging for 12 months in casks and barrels, with 10% new oak. Two months of blending then bottling at the estate, sensible use of sulfites.
