Elegant nose with pronounced mineral notes, as well as flint, citrus, and saline aromas. Clean and pure attack, the palate is crystalline and marked by great purity. Very tightly structured. Sleek, unctuous and complex, mixing mineral and citrus notes. Great length and an iodised finish.

100% Melon de Bourgogne from 50-year-old vines, cultivated biodynamically (certified DEMETER since 1998) on southwest facing slopes of stony soils. The grapes are harvested by hand, with yields around 35 hl/ha. Natural vinification: grapes are fed into the winery by gravity, followed by direct pressing of whole bunches in a pneumatic press, with indigenous yeasts, and ageing on the lees in underground tanks. Bottled without fining or filtration.

Fred bought Domaine de l'Écu in 2010, with its perfect soils cultivated organically since 1972, then certified biodynamic by DEMETER in 1998. He’s been collaborating with Guy Bossard since 2014, the master of Muscadet. The pairing is simply miraculous. Fred, a novice at winegrowing but an unparalleled taster, knows exactly what he wants and what he intends to do for wine in the Muscadet....
