100% Icaunais, the local name for the grape more widely known as Gascon. The parcel is surrounded by fruit trees, creating a beautiful ecosystem where wild grasses are allowed to grow freely. Does that get your imagination working? The vines are cultivated on a flinty clay terroir, with the least intervention possible; vine treatments are made from nettle, horsetail, flowers of sulphur and minute doses of Bordeaux mixture. Low yields, 30 months of aging in old barrels. Neither fined nor filtered, and without added sulfites.
