A blend of 50% Gamay and 50% Côt from organically farmed vines planted at the top of the hillside on light soils: flinty sandy clay and flinty gravels. Separate vinification of the two grape varieties: 8 days of destemmed maceration for Côt, 12 days of whole-cluster maceration for Gamay, blended at the end of alcoholic fermentation, then aged for 8 months in wooden truncated-cone vats. Bottled at the Domaine without fining or filtration, with a micro-dose of sulfur.
