100% Sauvignon from old vines farmed organically, planted on a plot with clay-flint soils. Manual harvest. Vinification: direct pressing, light settling, indigenous yeasts, transferred to barrels halfway through fermentation, 11 months of aging on lees in 400-liter barrels (maximum 4 years old, with some new barrels), followed by 4 months of refining in vats. Bottled at the Domaine in January 2025 with just a micro-dose of sulfur.
