Palsambleu... or an old peasant curse from Molière era! A dazzling fruitiness, enhanced with notes of spices and pepper, already tasting really well now but also with a huge aging potential of at least ten years. It's really sexy, like all of the Justices wines!
100% Cabernet Franc from vines grown organically and planted on the "Les Poyeux" plot in Chacé, which shows clay soils over limestone. Manual harvest in small crates of 10 kg. Vinification: total destemming, 45 days of maceration without forcing or pushing the extraction, then one year of aging in 500-liter barrels that have seen several wines, one year of maturation in bottles. Bottled at the estate in September 2023 without fining or filtration, without added sulphites.
Sophie and Clément Maire-Kurdziel, just in their early forties, are respectively from Moselle and Aveyron in France, and met at the university in Montpellier.
