A blend of 60% Sauvignon and 40% Menu Pineau from 75- and 45-year-old vines, farmed biodynamically and planted on the Herdeleau vineyard slope, composed of flinty clay soils. The two grape varieties were harvested together, with the Sauvignon just slightly overripe, followed by direct pressing, this was a rich, embellished by four years of aging, 18 months in old casks and the rest in vats. Bottled without fining or filtration, zero added sulphur!

Paul Gillet was born into a family of Alsatian winegrowers. In 1998, he’d make his debut in the wine world as a wine merchant. In 2002, his discovery of natural wines, especially those of Bruno Schueller , would leave a lasting impression, eventually changing his destiny. He opened a brasserie in Buenos Aires in 2007. There, Paul would promote Argentinean vignerons who shared his affection...
