100% Pinot Noir from 20-year-old organic and biodynamic vines, certified since 2012, and planted on a stony plateau. Manual harvesting in 25 kg crates, sorting on a table, and yields around 30 hl/ha. Vinification: cold pre-fermentation maceration, 5 weeks of maceration with punching down, twelve months of aging in wooden casks that have seen two to three wines. Micro-dose of sulfur with a total SO2 of 21 mg/liter.
Paul Fouassier
Paul Fouassier, who earned his viticulture and oenology degree in 1998, worked in several leading Bordeaux châteaux (Pavie and Angelus among others) before returning to his large family estate in 2001. The estate holds 60 hectares, 50 ha of Sauvignon and 10 ha of Pinot, which he manages with his cousin Benoît. The duo represents the 10th generation, drawing the best from the rigour of Benoît...
