Le Vallon - 2021 - Théophile Milan

A blended cuvée of Grenache Noir, Syrah, and Niellucio from organically farmed vines planted between 1997 and 1999 on soils of limestone scree with red clays, totaling three hectares. Hand-harvested and naturally vinified: co-maceration of whole clusters of all three varieties, a short five-day maceration, and aged in concrete tanks for 13 months. Bottled at the estate in October 2022 without fining or filtration. It's the same juice as the Le Vallon cuvée but with more aging and just a tiny bit of sulphur!
