A 100% Roussanne cuvée from organically farmed vines planted on white clay soils, specifically on a kaolin-rich quarry. Hand-harvested and naturally vinified without additives: direct pressing, transfer of the juice into barrels, fermentation and aging in demi-muids barrels, without new oak, for 12 to 14 months. Bottled at the Domaine without fining, filtration, or added sulfites.
