A blend of 85% Carignan and 15% Grenache from 85-year-old vines grown organically and co-planted on sandy-granite soils. Manual harvest on the 30th of August 2024. Vinification: semi-carbonic maceration for 12 days with the indigenous yeasts in stainless steel vats, soft pressing. Short aging in barrels that have seen several wines, for three months. The barrels mostly come from Burgundy’s Fred Cossard. Unfined, unfiltered, just a micro-dose sulphur at bottling (1 gr/hl).
