Atypical juice, we wouldn't expect anything less from Grégoire! Notes of apricot, beeswax, minerality and a hint of iodine. The palate is structured thanks to the short maceration, with a lush texture and lovely volume.

A blend of 75% Macabeu and 25% Grenache Gris and Blanc produced from organically grown grape, with vines planted in the village of Saint-Jean-Lasseille, in the Côtes du Roussillon Villages Les Aspres appellation. Harvesting was done by hand and followed by a natural vinification: 10 days of maceration of the whole bunches (hence the wine's deep color), pressing, 12 months of ageing in vats. Bottled on the 16th of October 2023, without fining or filtration, and without the addition of sulfites.
