From a parcel of very old Carignan, planted in 1900 at 700 metres altitude on marl terraces. The estate is certified organic and uses biodynamic techniques. The grapes are harvested by hand. Vinification: a short maceration with whole bunches of grapes and indigenous yeasts, followed by 10 months of aging in 500-liter barrels that have seen several wines. Bottled at the estate without fining or filtration, zero added sulphur.

Tom Lubbe
Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa. After starting out small, the estate would slowly grow in size. Tom would acquire old, high altitude parcels where he produces...
