A Côtes Catalanes, a blend of 70% Grenache Noir, 25% Carignan and 5% Syrah, grown on soils of limestone marl. The vines are between 30 and 95 years old and are farmed organically, with a yield of only 11 hl/ha. The Gaubys are also adepts of polyculture, which they use to recreate biodiversity around their vines. Vinification: maceration of whole bunches for 15 days in cement vats, indigenous yeasts. Maturation: 14 months in casks and vats. Bottled by gravity, without fining or filtration.
