40% Carignan Noir, 30% Mourvèdre, 20% Syrah and 10% Cinsault from vines grown organically and planted on 70% schist and 30% clay-siliceous soils, with different exposures. Manual harvest in small crates. Vinification: 10 days of maceration of the whole bunches, without pumping over or punching down, in a 27-hl concrete vats. Gentle pneumatic pressing, aging for 10 months in concrete vats. No fining, light filtration on a cellulose plate and just a micro-dose of sulphur before bottling.

Jean-Philippe Padié is an unmissable Roussillon winemaker. After studying at the Montpellier School of Agronomy, he trained and worked alongside Gauby and Mas Amiel, very famous estates in Roussillon and in Domaine Plageoles in Gaillac.
