75% Grenache Gris and Blanc, up to 85 years old (and from the highest altitude vines in Banyuls), and 25% Carignan Blanc and Gris, from young, 5-year-old vines. An extreme parcel in every respect – a north-facing, stony wasteland. Manual harvest on the 19th and 23rd of August, with very low yields. Vinification: direct pressing for the two Grenache, and maceration for the Carignans, maturation 6 months in barrels that have seen several wines. Bottled at the estate without fining nor filtration, just one gram/hl added before bottling.
