100% Macabeu from organically and biodynamically farmed vines, harvested by hand in 500kg bins. Natural vinification with no additives: direct pressing of whole bunches, juice transferred to 500L barrels (no new oak) and concrete tanks for fermentation and aging over 8 months. Bottled at the estate in late April 2024, with no fining, no filtration, and zero added sulfur.

Tom Lubbe
Tom Lubbe hails from South Africa. In France, he was one of the finest students of Gérard Gauby , thanks to whom he met Nathalie, Gérard’s sister, with whom he settled in 2001 in Calce, in a still unspoilt environment, where they founded the Domaine Matassa.
