A blend of Syrah, Grenache, Carignan and Mourvèdre, from old vines (30 to 120 years old) grown biodynamically and planted on schist and limestone soils. Manual harvest and controlled yields. The Gaubys are also adepts of polyculture, which they use to recreate biodiversity around their vines. Natural vinification: maceration of whole bunches for 10 days, with indigenous yeasts, 10 months of aging in 500-litre barrels and casks. Bottled by gravity, without fining or filtration.
