A Mondeuse for laying down, with a beautiful spiced nose of black fruits. The palate is still young, but will develop a beautiful structure and spicy aromas, with a finely astringent finish. Worth decanting, ideally one hour before tasting.

100% Mondeuse from organically farmed vines using biodynamic methods. This cuvée used to come from the vines behind grandfather Marius Tissot's barns, but today it's a blend of several parcels from the estate. Harvesting by hand with sorting of the berries. Vinification: total de-stemming, 17 to 21 days maceration, 18 months minimum ageing, 65% in oldbarrels and 35% in amphorae. Bottled on the estate according to the lunar calendar, with just a micro-dose of sulphur.
