100% Roussanne from organically-grown vines planted on steep, South-facing terraces with white limestone soils, where beautiful flora thrives in springtime. Harvesting was done by hand. Vinification: the whole bunches are pressed directly, fermentation and one year of aging in old barrels, vats and ceramic amphorae. Bottled on the estate in accordance with lunar cycles, without fining or filtration, with just a micro-dose of sulfur.
