A blend of Roussanne with just a hint of Jacquère, produced from organic, hand-harvested vines. This is a late harvest, so the grapes are overripe, which concentrates the sugars and aromas. Vinification: direct pressing, fermentation and ageing in vats and barrels that have seen several wines. Bottled on the estate according to lunar cycles, with just a micro-dose of sulfur.
